Pullulanase (R-enzyme) is a starch debranching enzyme, is often used in biochemical studies. Pullulanase hydrolyses the alpha-1,6 glucosidic linkages in starch, amylopectin, pullulan, and related oligosaccharides. Pullulanase converts polysaccharide into small fermentative sugars during saccharification [1] .
