Raffinose (Melitose), a non-digestible short-chain oligosaccharide, is a trisaccharide composed of galactose, glucose, and fructose and can be found in many plants. Raffinose (Melitose) can be hydrolyzed to D-galactose and sucrose by the enzyme alpha-galactosidase (alpha-GAL) [1] .
