HSA is responsible a.o. for binding and transporting of fatty acids and hormones. HSA also stabilizes the pH value of blood and the oncotic pressure. HSA is a globular protein with an alpha-helical structure containing multiple binding sites for both hydrophobic and hydrophilic substances.
