Chlorogenic acid is a phenolic natural product isolated from the leaves and fruits of dicotyledonous plants, including the coffee bean. Structurally, it is the ester of caffeic acid with the 3-hydroxyl group of quinic acid. Chlorogenic acid is an intermediate in lignin biosynthesisis an therefore an important factor in plant metabolism. This compound has been shown to have a broad range of biological properties, including hepatoprotective, antioxidant, neuroprotective, anti-diabetic, antimicrobial, anticarcinogenic, anti-inflammatory and anti-obesity activities. Recent studies showed the involvement in regulating glucose and lipid metabolism, improving insulin sensitivity and promotion of weight loss.
